Another traditional faggots recipe. Traditional cooking from any country has as many recipes as there are cooks. There is no right way to do it just find one that works for you develop it to your taste and then stick to it! On this occasion the recipe works by replacing some of the liver with lambs kidneys and beefing up the sage to give a more intense flavour. The sauce has the addition of some sugar and red wine vinegar which again intensifies the taste of the gravy and allows it to complement the more robust herby flavour of this Faggots Recipe.

Roast Quail Recipe with Sage and Lemon


A quick simple easy and tasty roast quail recipe that just requires quality ingredients and very little skill.

Quail are a very small bird and you will need three per person. Try to get unfarmed quail if you can.

Roasted swiftly with Sea Salt Sage and Lemon this dish goes very well with some good boulengere potatoes.

For this Roast Quail Recipe with Sage and Lemon – You will need:

Ingredients (Serves 4)

  • 12 large quail
  • 5 tablespoons sea salt
  • 1 handful Fresh Sage
  • 4 tablespoons extra virgin olive oil
  • 3 lemons

Method

  1. Chop the sage with the sea salt
  2. Preheat your oven to 200c
  3. Cut each of your lemons into four pieces
  4. Heat a large heavy based roasting pan on top of your stove until hot
  5. Chop the sage roughly with the sea salt
  6. Rub the quail all over inside and out with the sea salt and sage mixture
  7. Brush the base of your roasting pan generously with olive oil
  8. Add the rice and stir until all the grains are coated
  9. Brown the quail all over
  10. Add the lemon quarters and quickly heat them until they start to release their juice
  11. Stuff each of the quail with a piece of lemon
  12. Transfer to the oven and roast for 30 minutes or until the leags come easily away from the body
  13. Serve with extra lemon

I know game recipe and their strong flavours put off a lot of people but this Roast Quail Recipe really is very simple and is a great introduction to the variety that game recipes offer

For this Prawn and Samphire Risotto Recipe – You will need:

Ingredients (Serves 4/6)

  • 750gm large cooked prawns in their shells
  • 100gm washed and trimmed Samphire
  • 100gm butter
  • 3 banana shallots finely chopped
  • 1250ml l litre fish stock
  • 125ml white wine
  • v2 garlic cloves crushed
  • 250gm of Arborio Rice
  • 30gm freshly grated parmesan
  • 50ml single cream
  • 1 Star Anise
  • 8 spring onions chopped

Method

  1. Peel the Prawns
  2. Add 25gm of the butter to a pan and heat gently
  3. Add the shallots, garlic, star anise and prawn shells and cook very gently for about ten minutes
  4. Add the stock and bring to the boil
  5. Simmer for 20 minutes
  6. Strain the stock
  7. Melt the 50gm remaining butter in a large pan and cook gently for two minutes
  8. Add the rice and stir until all the grains are coated
  9. Pour in the wine and stir until it has all been absorbed
  10. Add a ladle of stock and continue stirring until the stock has been absorbed
  11. Repeat until all the stock is used up
  12. Add the prawns and samphire and stir for one minute
  13. Finish with the remaining butter, cream and parmesan
  14. Serve immediately

The risotto should be slightly runny not stodgy. If you lift the serving bowl up at an angle the risotto should move slowly across the plate. The above picture shows  a heaped risotto.  If your risotto looks like this it will probably be too heavy. A heaped risotto makes for better photographs but not better eating.
