Caremelised Orange Cheesecake Recipe

For this Caremelised Orange Cheesecake Recipe – You will need:
INGREDIENTS
- 200gm Chocolate Chip Cookies
- 120 gm melted butter
- 6 eggs
- 140gm soft Brown Sugar
- 250gm Mascarpone Cheese
- 200gm Crème Fraiche
- 300gm natural Yoghurt
- 2 finely grated zest of lemons
- 1/2 tsp vanilla Extract
- For the Caramelised Oranges:
- 2 medium thin skinned Oranges
- 115gm Brown Sugar
- some Chocolate Flakes to Garnish
METHODS
- To make the Caramelised Oranges:
- Place the Oranges in a pan with 600ml Water
- Bring to the boil and simmer uncovered for 1 hour
- Watch the water carefully – when you have finished you should have two tablespoons of cooking liquid left
- Leave the Oranges to cool and then shop them finely keeping any juice but discarding any seeds
- Return to the pan with the reserved cooking fluid
- Add the Sugar
- Cook over a very low heat for about 45 minutes until the Oranges are caramelised
- Set the Oranges aside to cool
- To make the cheesecake:
- Grease and line 26cm loose bottomed cake tin
- Crush the Chocolate Chip Cookies well
- Mix the biscuits in with the melted Butter
- Spread the biscuits evenly over the whole of the cake tin base
- Press down well
- Preheat the oven to 180C 350F Gas mark 4
- Whisk the sugar and eggs together until pale and creamy
- Gradually add the room temperature Mascarpone, Crème Fraiche and Yoghurt stirring gently all the time
- Pour into the cake tin
- Place in the oven and cook for 45 minutes
- Remove from the oven and run a knife carefully around the outside -this allows the cheesecake to shrink as it cools without cracking
- Leave to cool, remove carefully then serve with shaved chocolate and whipped cream
