I developed this Carrot and Ginger Soup Recipe as a result of desperation – well a bit exaggerated really! I was making traditional Sunday Roast for 30 people when the weather turned bad and the snow meant no one could make it. I had to convert the traditional Sunday Roast into various storable recipes. This Carrot and Ginger soup with Orange is one of the results. I love it! The technique may seem unusual but after ten years of making soup for 50 people every day from whatever was available I Know it works!

For this Carrot and Ginger Soup Recipe you will need:

Ingredients (Serves 8 )

  • 1.25 kilo of fresh carrots chopped into 2″ pieces
  • 1.5 litre Vegetable Stock
  • 1 large Sweet Onion – peeled and halved
  • 3 cloves garlic peeled whole
  • 50gm / 2″ fresh ginger peeled and chopped roughly
  • 2 tsp cumin
  • 350gm floury potatoes
  • 2 fresh chillies – chopped finely
  • 125gm butter
  • 1 medium orange – preferably with thin skin

Method

  1. Add the butter to a large pan over a very low heat
  2. Add the carrots, onions, ginger, chilli and garlic
  3. Fry very gently stirring occasionally until the onion softens and separates into its layers
  4. Keep frying very gently for 5 more minutes
  5. Add the Potatoes and Orange
  6. Add the stock
  7. Cook slowly simmering until the potatoes are soft
  8. Using a stick blender, blender or food processor whizz the soup ingredients until smooth
  9. Return to the pan and add the cream
  10. Reheat until just close to simmering
  11. Taste and season. This is the most important stage – a little more cream a little more water, salt, pepper, cayenne even sugar to add a little more sweetness can be added here

A lovely Carrot and Ginger Soup Recipe – warming, slightly spicy with a hint of orange. Serve with some good fresh Granary Bread
