For this Roast Quail Recipe with Sage and Lemon – You will need:
Ingredients (Serves 4)
- 12 large quail
- 5 tablespoons sea salt
- 1 handful Fresh Sage
- 4 tablespoons extra virgin olive oil
- 3 lemons
Method
- Chop the sage with the sea salt
- Preheat your oven to 200c
- Cut each of your lemons into four pieces
- Heat a large heavy based roasting pan on top of your stove until hot
- Chop the sage roughly with the sea salt
- Rub the quail all over inside and out with the sea salt and sage mixture
- Brush the base of your roasting pan generously with olive oil
- Add the rice and stir until all the grains are coated
- Brown the quail all over
- Add the lemon quarters and quickly heat them until they start to release their juice
- Stuff each of the quail with a piece of lemon
- Transfer to the oven and roast for 30 minutes or until the leags come easily away from the body
- Serve with extra lemon
