I love their cheese and after tasting it I embarked upon the idea of finding a recipe which perfectly suited its mildly Goaty flavour and exceptional crumbly texture. I love it. For this Prawn and Samphire Risotto Recipe – You will need:

Ingredients (Serves 4/6)

  • 750gm large cooked prawns in their shells
  • 100gm washed and trimmed Samphire
  • 100gm butter
  • 3 banana shallots finely chopped
  • 1250ml l litre fish stock
  • 125ml white wine
  • v2 garlic cloves crushed
  • 250gm of Arborio Rice
  • 30gm freshly grated parmesan
  • 50ml single cream
  • 1 Star Anise
  • 8 spring onions chopped

Method

  1. Peel the Prawns
  2. Add 25gm of the butter to a pan and heat gently
  3. Add the shallots, garlic, star anise and prawn shells and cook very gently for about ten minutes
  4. Add the stock and bring to the boil
  5. Simmer for 20 minutes
  6. Strain the stock
  7. Melt the 50gm remaining butter in a large pan and cook gently for two minutes
  8. Add the rice and stir until all the grains are coated
  9. Pour in the wine and stir until it has all been absorbed
  10. Add a ladle of stock and continue stirring until the stock has been absorbed
  11. Repeat until all the stock is used up
  12. Add the prawns and samphire and stir for one minute
  13. Finish with the remaining butter, cream and parmesan
  14. Serve immediately

The risotto should be slightly runny not stodgy. If you lift the serving bowl up at an angle the risotto should move slowly across the plate. The above picture shows  a heaped risotto.  If your risotto looks like this it will probably be too heavy. A heaped risotto makes for better photographs but not better eating.
