For this Cauliflower Soup Recipe with brie and bacon – You will need:

ingredients – Serves 4 – 6

  • 400ml Whole Milk
  • 200ml Vegetable Stock
  • 150ml Single Cream
  • 1 large onion chopped
  • 1 large cauliflower
  • 1 large potato
  • 2 green chillies
  • 1 tablespoon butter
  • 100gm Brie chopped
  • 100gm cubed pancetta

Method

  1. Melt the butter in al large pan, add the pancetta and fry gently until crisp
  2. Remove the pancetta and add the onions, garlic and chillies
  3. Fry gently for 5 minutes
  4. Add the stock and milk
  5. Trim the Cauliflower and add in florets to the liquid
  6. Add the potato in small cubes
  7. Cook for 20 minutes
  8. Add the brie
  9. Blitz everything in a blender or processor until everything is perfectly smooth
  10. Return to the pan and add the cream
  11. warm through and ladle into bowls
  12. sprinkle each bowl with the reserved pancetta

Serve this Cauliflower with some real artisan bread and some crisped bacon
