Cauliflower Soup Recipe -With Brie and Bacon

For this Cauliflower Soup Recipe with brie and bacon – You will need:
ingredients – Serves 4 – 6
- 400ml Whole Milk
- 200ml Vegetable Stock
- 150ml Single Cream
- 1 large onion chopped
- 1 large cauliflower
- 1 large potato
- 2 green chillies
- 1 tablespoon butter
- 100gm Brie chopped
- 100gm cubed pancetta
Method
- Melt the butter in al large pan, add the pancetta and fry gently until crisp
- Remove the pancetta and add the onions, garlic and chillies
- Fry gently for 5 minutes
- Add the stock and milk
- Trim the Cauliflower and add in florets to the liquid
- Add the potato in small cubes
- Cook for 20 minutes
- Add the brie
- Blitz everything in a blender or processor until everything is perfectly smooth
- Return to the pan and add the cream
- warm through and ladle into bowls
- sprinkle each bowl with the reserved pancetta
Serve this Cauliflower with some real artisan bread and some crisped bacon
