For this Chillied Mushrooms Recipe – You will need:
Ingredients (Serves 4)
- 2 good quality Ciabatta
- 300gm wild mixed mushrooms
- 1/2 tablespoon flour
- 1/2 tsp cayenne pepper
- 1/4 tsp mustard powder
- 100gm butter
- 1 tablespoon chopped curly parsley
- 75ml double cream
Method
- Toast the ciabatta on either side
- Butter the ciabatta and set to one side
- Toss the mushrooms in the flour, cayenne pepper and mustard powder
- Melt the butter in a heavy based saucepan
- Add the floured mushrooms and fry gently until soft
- Add the cream and parsley and heat through
- Top the toast with the mushrooms and serve
