For this Chillied Mushrooms Recipe – You will need:

Ingredients (Serves 4)

  • 2 good quality Ciabatta
  • 300gm wild mixed mushrooms
  • 1/2 tablespoon flour
  • 1/2 tsp cayenne pepper
  • 1/4 tsp mustard powder
  • 100gm butter
  • 1 tablespoon chopped curly parsley
  • 75ml double cream

Method

  1. Toast the ciabatta on either side
  2. Butter the ciabatta and set to one side
  3. Toss the mushrooms in the flour, cayenne pepper and mustard powder
  4. Melt the butter in a heavy based saucepan
  5. Add the floured mushrooms and fry gently until soft
  6. Add the cream and parsley and heat through
  7. Top the toast with the mushrooms and serve
