Classic Cranachan Recipe
Not exactly a classic Cranachan Recipe but excellent just the same. Cranachan is a Scottish recipe using quintessentially Scottish ingredients -Oats, Raspberries and Whisky. Easy to make it is the perfect Summer dessert, quickly put together and even more quickly eaten. The basics can be varied to produce a similar dish with different seasonal or national twists. Try Oranges and Cointreau, Cherries and Kirsch or Apples and Calvados. For this Cranachan Recipe you will need:
INGREDIENTS (serves 6)
- 150gm of large Oats
- 25gm of flaked Almonds
- 100gm soft Brown Sugar
- 300gm Mascarpone Cheese
- 4 tablespoons of Whisky
- 350ml Double Cream lightly whipped
- 300gm Raspberries
METHODS
- Heat a heavy based frying pan over a low heat
- Add the Oats and Sugar and increase the heat
- Toast the Oats in the sugar for 3 – 4 minutes
- Remove from the heat and leave to cool
- Place the Mascarpone in a bowl and whisk until smooth – you will find this easier if you let the Mascarpone come up to room temperature before whisking
- Add the Whisky to the Mascarpone and fold in
- Next and the whipped cream and also fold this in
- Add the Oats and fold them into the mixture
- Finally Fold in the raspberries trying not to break them up
- Transfer the mixture to the serving dishes
- Drizzle a little extra whisky over the top of each serving
- Serve immediately or chill before serving
