Crab Thermidor Recipe
A very traditional Crab Thermidor Recipe, based of course on the very well known lobster thermidor. Cheaper but just as tasty! Serve with a good fresh crispy salad and some good sourdough bread

For This Crab Thermidor Recipe you will need:
Ingredients
- 4 dressed crabs
- 250ml double cream
- 200ml white wine
- 200gm mature cheddar cheese
- 1/2 tsp chilli flakes
- 4 shallots diced very small
- 50gm butter
- 100gm white bread crumbs no crusts
Method
- Separate the brown and white crab meat
- Soften the shallots in the butter
- Add the white wine and reduce to a syrup
- Add the cream and bring back to the boil
- Add the chilli and 100gm of the cheese
- Simmer for 3 minutes
- Remove from the heat and add the brown crab meat
- Mix the white crab meat in with the breadcrumbs and 100gm of the cheddar
- Share the brown crab mixture among 4-6 ramekins depending on whether you are serving as a starter or main course
- Top with the white meat mixture
- Bake in a 180c mixture for 10 minutes
serve this Crab Thermidor Recipe on its own as a starter or with a fresh salad and buttered new potatoes for a main course. Enjoy!
