For this Hot Chocolate Soufflé Recipe – You will need:
Ingredients (Serves 6)
- 85gm Good quality dark chocolate (80%)
- 1 tablespoons brandy
- 25gm butter
- 25gm plain flour
- 150ml milk
- 70gm caster sugar
- 1/2 teaspoon vanilla extract
- 4 free range eggs separated
Method
- Preheat the oven to 190c 375c Gas 5
- Lightly grease 4 ramekin dishes and dust with flour
- Break up the chocolate and add to a bowl with the brandy
- Put the bowl over a pan of simmering water and heat until the chocolate is melted
- Melt the butter in a saucepan over a very gentle heat
- Add the flour and cook gently for two minutes stirring gently
- Warm the milk in another saucepan
- Add the sugar to the milk stir until dissolved
- Off the heat blend in the milk bit by bit stirring all the time to the flour and butter
- Return the pan to the heat and cook gently stirring all the time until the mixture thickens
- Lightly beat the egg yolks
- Beat the egg whites until fairly stiff
- Whisk in the yolks to the chocolate mixture
- Gently fold in the egg whites until well combined trying to retain the air in the whites
- Share the mixture between the ramekins
- Bake for 15 minutes until well risen
- Serve immediately
