Being from Lancashire I grew up on real tasty Lancashire Cheese from the local market. This Chilli Beetroot and Streaky Bacon Recipe is a salad served best with Mrs Kirkhams strong Lancashire Cheese. it is nothing like the mild and creamy supermarket unmatured cheese. For this Chilli Beetroot and Streaky Bacon Salad Recipe- You will need:

Ingredients (Serves 4)

    >225gm Lancashire Cheese
  • 125gm raw beetroot
  • 100gm dry cure streaky bacon</li>
  • 150gm baby leaf salad
  • 3 tablespoons sherry vinegar
  • 1 finely chopped garlic glove
  • 1 tsp caster sugar
  • 1 finely chopped chilli including seeds
  • 4 tablespoon extra virgin olive oil

Method

  1. Roast and peel the beetroot
  2. Slice in half then into thin half moon slices
  3. Slice the cheese thinly and into smallish pieces
  4. Fry the bacon slowly until crispy
  5. Marinade the beetroot, olive oil, sugar, sherry vinegar, chilli, garlic and salt.
  6. Leave for one hour
  7. Toss the leaves with the bacon, cheese and beetroot
  8. Drizzle over the marinade ingredients as a dressing

beetroot is much underestimated vegetable I highly recommend that you explore its possibilities!
