Being from Lancashire I grew up on real tasty Lancashire Cheese from the local market. This Chilli Beetroot and Streaky Bacon Recipe is a salad served best with Mrs Kirkhams strong Lancashire Cheese. it is nothing like the mild and creamy supermarket unmatured cheese. For this Chilli Beetroot and Streaky Bacon Salad Recipe- You will need:
Ingredients (Serves 4)
- >225gm Lancashire Cheese
- 125gm raw beetroot
- 100gm dry cure streaky bacon</li>
- 150gm baby leaf salad
- 3 tablespoons sherry vinegar
- 1 finely chopped garlic glove
- 1 tsp caster sugar
- 1 finely chopped chilli including seeds
- 4 tablespoon extra virgin olive oil
Method
- Roast and peel the beetroot
- Slice in half then into thin half moon slices
- Slice the cheese thinly and into smallish pieces
- Fry the bacon slowly until crispy
- Marinade the beetroot, olive oil, sugar, sherry vinegar, chilli, garlic and salt.
- Leave for one hour
- Toss the leaves with the bacon, cheese and beetroot
- Drizzle over the marinade ingredients as a dressing
beetroot is much underestimated vegetable I highly recommend that you explore its possibilities!
