To make this Pineapple Relish Recipe – you will need:
Ingredients
- 1 medium fresh pineapple
- 3 tablespoons sherry vinegar
- 150 g brown sugar
- 50gm raisins
- 1 medium onion diced finely
- 1/2 bunch chopped chives
Method
- Cut the pineapple into small chunks
- Add everything to a pan apart from the chives
- Simmer for approximately 45 minutes until there is just a syrup left in the pan
- Stir in the chives and leave to cool
