For this Smoked Trout Avocado and Brown Shrimp Mousse Recipe – You will need:

Ingredients (Serves 4/6)

  • 275gm smiked trout
  • 1 large ripe avocado
  • 300ml creme fraiche
  • 2 tablespoonslemon zest
  • 150gm cooked and peeled brown shrimps
  • 1 finely chopped red chilli

Method

  1. Skin and bone the trout
  2. Peel stone and liquidise the avocado
  3. Combine the trout and avocado with the chilli creme fraiche and lemon
  4. Season to taste with the salt and pepper
  5. Fill four small ramekins with half the mousse mixture
  6. Top with the shrimps then finish with the rest of the mousse
  7. Chill for 1 hour
  8. Serve with some good light bread garnished with some whole shrimps and lemon wedges

No apologies for the retro feel to this dish. the combination of flavours is wonderful!
