For this Smoked Trout Avocado and Brown Shrimp Mousse Recipe – You will need:
Ingredients (Serves 4/6)
- 275gm smiked trout
- 1 large ripe avocado
- 300ml creme fraiche
- 2 tablespoonslemon zest
- 150gm cooked and peeled brown shrimps
- 1 finely chopped red chilli
Method
- Skin and bone the trout
- Peel stone and liquidise the avocado
- Combine the trout and avocado with the chilli creme fraiche and lemon
- Season to taste with the salt and pepper
- Fill four small ramekins with half the mousse mixture
- Top with the shrimps then finish with the rest of the mousse
- Chill for 1 hour
- Serve with some good light bread garnished with some whole shrimps and lemon wedges
