A really wonderfully flavoursome base for a soup to which you can add just about anything. This Thai Hot and Sour Soup Recipe uses prawns and mushrooms.

For this Thai Hot and Sour Soup Recipe – You will need:

Ingredients serves 4

  • 2 red chiilies chopped
  • 2 teaspoons of palm sugar or dark brown sugar
  • 1 stick lemongrass tender leaves
  • 1 small bunch coriander
  • 2cm fresh ginger
  • 1 clove garlic
  • 1.2 ltrs chicken or vegetable stock
  • 3 juice of three limes
  • 2 tablespoons thai fish sauce(nam pla)
  • 1 tablespoon light soy sauce
  • 12 large king prawns
  • 10 Oyster, Shitake or Chestnut Mushrooms(Sliced)

Method

  1. Whiz the chillies sugar lemongrass, ginger and coriander in a processor with the lime juice, soy sauce and fish sauce.
  2. Bring the stock to the boil
  3. Add the spice paste mix
  4. Simmer slowly for 3 minutes
  5. Add the prawns and Mushroom
  6. Cook for a further 3 minutes then serve
