For this Thai Hot and Sour Soup Recipe – You will need:
Ingredients serves 4
- 2 red chiilies chopped
- 2 teaspoons of palm sugar or dark brown sugar
- 1 stick lemongrass tender leaves
- 1 small bunch coriander
- 2cm fresh ginger
- 1 clove garlic
- 1.2 ltrs chicken or vegetable stock
- 3 juice of three limes
- 2 tablespoons thai fish sauce(nam pla)
- 1 tablespoon light soy sauce
- 12 large king prawns
- 10 Oyster, Shitake or Chestnut Mushrooms(Sliced)
Method
- Whiz the chillies sugar lemongrass, ginger and coriander in a processor with the lime juice, soy sauce and fish sauce.
- Bring the stock to the boil
- Add the spice paste mix
- Simmer slowly for 3 minutes
- Add the prawns and Mushroom
- Cook for a further 3 minutes then serve
