For this Tuna Nicoise Salad Recipe - You will need:

INGREDIENTS (serves 4)

  • 4 Line Caught Tuna Steaks
  • 1 crisp lettuce – Cos is preferable or two little gem lettuce
  • 125 gm cooked new potatoes
  • 3 large Ripe Vine Tomatoes -Plum if possible – quartered
  • 8 good quality black olives
  • 125gm Lightly cooked green beans
  • 8 anchovy fillets – not the heavily salted tinned kind
  • 3 hard boiled free range eggs – cut into quarters
  • 3 Tablespoon Cold pressed extra virgin Olive Oil
  • 2 Tablespoons Sherry Vinegar
  • 1 crushed clove of Garlic
  • 1 teaspoon Dijon Mustard
  • 1 Yolk of free range egg
  • 2 tablespoons of mixed fresh herbs Chervil, Chives and Tarragon
  • some Freshly Ground Sea Salt and Black Pepper
  • 1 Juice of one Lemon

METHODS

  1. Mix the Oil, Vinegar, Garlic, Mustard, Egg Yolk and Fresh Herbs in a bowl
  2. Whisk well to combine
  3. Season with the Salt and Pepper
  4. Refrigerate until needed.
  5. Place the Tomatoes, Potatoes, Lettuce, Anchovies and Green Beans in a separate bowl and toss to mix
  6. Get your four serving bowls or plates and arrange the salad in the centre of each
  7. Drizzle over the dressing
  8. Arrange the eggs around the outside of each plate
  9. Heat a griddle pan brushed with oil until the oil begins to smoke
  10. Cook the Tuna for 4 minutes turning twice to create a cross hatch pattern – see picture
  11. Place the tuna on top of the salad and drizzle a little Lemon Juice over each one

This Tuna Nicoise Salad Recipe makes a wonderful lunch dish and requires no additions to make a complete meal
