For this Tuna Tomato and Anchovy Tart Recipe – You will need:

Ingredients (Serves 6)

  • 250gm ready made shortcrust pastry
  • 450gmRipe plum tomatoes
  • 2 tablespoons Olive Oil
  • 1 clove garlic finely chopped
  • 1 medium onion finely chopped
  • 1 teaspoon oregano
  • v6 anchovy fillets – not the salty ones
  • 125gm Fresh Tuna chopped into six pieces
  • 20gm freshly grated parmesan
  • 20gm Freshly grated mature cheddar
  • 2 Large Free Range Eggs
  • 150ml single cream
  • 25gm quality black olives chopped

Method

  1. Preheat your oven to 200c 400f gas 6
  2. Line a 20cm 8″ loose bottomed flan dish with the pastry overlapping the lip a little
  3. Chill for 30 minutes
  4. Fill with tin foil and baking beans or rice or dried beans
  5. Place in the oven and cook for 10 minutes
  6. Remove from the oven remove the beans and foil
  7. Replace and cook for a further 5 minutes
  8. Remove from the oven and using a rolling pin trim the excess pastry
  9. Roughly chop and de-seed the tomatoes
  10. Heat the oil in a small pan add the onion and sauté gently for 5 minutes
  11. Add the garlic, oregano, chopped anchovies and chopped tuna
  12. Cook for two minutes
  13. Whisk the eggs and cream together
  14. Fill the tart case with the onion and tuna mix then the tomatoes and olives then the cheeses
  15. Finally top with the egg mixture
  16. Cook in the preheated oven for 15 to 20 minutes
